Peanut Butter & Dark Chocolate Cookies

This perfect picnic or tea-time treat will satisfy any cookie monster! Try this new recipe created by our friends at The Coach House Kitchen.

Peanut butter & dark chocolate cookies – Makes 10 Large Cookies.

Ingredients:

130g unsalted butter
210g peanut butter
160g caster sugar
160g dark brown sugar
300g plain flour
10g bicarbonate of sodium
2g salt
2 eggs
200g dark chocolate chips

Directions:

1. Using a food mixer, mix butter, peanut butter and sugars until creamy.

2. Add the eggs one by one, while mixing continually at medium speed.

3. Add the flour, bicarbonate and salt, just enough to come together and finally,
add the chocolate chips.

4. Tip the dough into a floured surface and make it into a 25cm long roll. Freeze it.

5. Cut discs of 3cm thickness, place into a lined baking tray and cook it at 170c for 10 minutes.

6. Allow to cool down.
